Denaturation


Denaturation is when a protein becomes denatured because the change cannot be reversed, it's the change in structure of protein molecules. Applying heat can change the shape of proteins. By adding acids or alkalis, this can also change the shape of the protein. This was demonstrated when we separated the yolk of the egg and egg white so we can create the egg for the mixtures. This allowed us to create the meringue with the egg whites, and allowed us to produce the mixture with the yolk.  Denaturation is a partially reversible change.  For example, when an egg white is whisked it incorporates air to form a foam.
